Celebration Sugar Cookies - Vegan
My son has finally completed all his paperwork is now officially ready to register for classes for the coming semester. I cannot be happier. So I decided to celebrate by making him these cookies. As usual these were inspired by the minimalist baker - where in all honesty I turn to for everything I want to cook.
Ingredients
1/2 cup vegan butter (such as Earth Balance; softened)
1/2 cup organic cane sugar (plus more for topping if you like)
1/4 cup brown sugar
1/4 cup pumpkin puree* (egg substitute)
1 tsp pure vanilla extract
1 3/4 cups unbleached all-purpose flour (plus more for rolling into shapes)
1/2 Tbsp cornstarch (for consistency)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1-2 tsp non-dairy milk
Materials needed
Mixing bowl and mixing spoon
Cookie sheet
Parchment paper or wax paper
Cookie cutter (I used the top of a spice bottle)
Small bowl or dish
Add ingredients to bowl in list order, mix with mixing spoon until dough comes together in a bowl, a few minutes
Wrap dough in plastic or place in a freezer bag and freeze for 15 minutes
After 15 minutes, place dough on parchment paper, cover ball with parchment paper and roll or press until dough is about 1/4 inch thick
Turn oven on to 350 degrees F
Add sprinkles or sugar to small bowl or dish
Cut out cookies, coat with sugar or sprinkles or leave plain and place on Silicone baking mat
Bake for 10-12 minutes remove from oven and let cool
Eat and Celebrate!!!!!
